Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes

ingredients

1 large yellow onion
2 fresh garlic cloves, chopped finely
3 tablespoons of olive oil
4 cups of freshly chopped tomatoes
Salt
Pepper
Paprika
Cumin
Cayenne
4 eggs
Optional ingredients:
1 large red bell pepper
Sriracha
Red pepper flakes
Fresh herbs (parsley or mint)
Avocado
Feta
Hummus
Tahini
Israeli salad (finely chopped cucumbers, tomatoes, and red onion mixed in olive oil, lemon, salt and pepper)
Pita, challah, or any bread!

Steps

  1. Start by sauteeing 3 tablespoons of olive oil with 1 chopped large yellow onion and 2 finely chopped fresh garlic cloves over medium heat for about 5 minutes. Let the onion soften, and add 1 chopped large red bell pepper. Sautee the vegetables for about 5 minutes.
  2. Stir in 4 cups of freshly chopped tomatoes. Make sure to add all of the juice from the tomatoes in the mixture.
  3. Let the crushed tomatoes simmer for about 5 minutes before adding desired spices, including salt, pepper, paprika, cumin, cayenne, and red pepper flakes if you want an extra kick! Sometimes when I’m feeling extra spicy, I like to add some Sriracha to the shakshouka mix! Give your shakshouka mix a taste and add spices based on your preferences.
  4. Let the mixture simmer for about 15-20 minutes. Start to make little pockets in the shakshouka mix where you would want to place your eggs. This will help the eggs hold their shape once in the mixture.
  5. Crack your eggs into the pockets you made in the shakshouka mix. Let your eggs cook covered, and cook your eggs as desired!
  6. When your shakshouka is done, personalize it by adding your favorite toppings. You can add fresh, chopped herbs, such as parsley or mint. I like to add chunks of feta and sliced avocado.
  7. This meal is best served with a side of bread, such as pita or challah, a small salad (my personal favorite is Israeli salad! It’s super quick, easy and has all natural ingredients, check out how to make this salad in the ingredients list above!), and some hummus and tahini. My go-to hummus is Sabra’s Organic Traditional Hummus. It has a short list of all natural ingredients, meaning it tastes like traditional Mediterranean hummus, and you get some extra protein to start your day, too.
It’s as easy as that! There are many different variations of shakshouka, and this recipe encourages you to add what’s best for you. Make shakshouka for your next breakfast or brunch date to impress your friends with your fabulous cooking skills!
Shakshouka is traditionally a North African dish that was popularized as a breakfast meal in Israel. Growing up, shakshouka has been a staple in my household. On weekends, I would expand this recipe so that I cooked 12 eggs for me and the rest of my family. Shakshouka is a fast and simple breakfast food that is both nutritious and delicious!

I love making shakshouka to start my day with a healthy, yet satisfying, guilt-free meal. This meal is not too light and not too heavy, and uses basic ingredients that you probably already have at home. This twist on morning eggs is my favorite way to start the day.
